Elote (Mexican Grilled Corn)


Ingredients

Garlic Crema

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1 clove garlic, finely minced

  • 1/4 tsp cayenne pepper

  • 1/4 cup grated manchego, parmesan or feta cheese

  • Juice of 1 lime

  • Pinch of salt and pepper to taste

Grilled Corn Setup

  • 3 corns on the cob, shucked

  • olive oil

  • 1/4 cup cilantro or parsley, finely chopped

  • cayenne pepper

  • 1/4 cup manchego, parmesan or feta cheese

  • 1 lime, cut in wedges

Preparation

Step 1:

To make garlic crema: mix mayonnaise, sour cream, minced garlic, cheese, cayenne and lime juice in a bowl.  Add salt and pepper to taste.  Set aside.

Step 2:

Prepare BBQ for medium heat.  Brush corns lightly with olive oil and place directly on BBQ. Grill for approximately 10 minutes, rotating occasionally until corn is fully cooked and charred.      

Step 3: 

Once the corn has cool down a bit, it's time to start dressing them.  Brush corns evenly with the garlic cream. Then sprinkle with cheese, cayenne pepper and cilantro (or parsley).  Serve with lime wedges.
